Dorper and Katahdin hair sheep produce a leaner and milder tasting meat. All are pasture raised here at Red Cedar Ranch and finished on alfalfa for delicious flavor and an environmentally friendly environment.

Pre-order deposits

1/2 lamb - $125 deposit to hold
Whole lamb - $250 deposit to hold
Balance of $7.95/lb hanging weight due to RCR by pick up.

***Hanging weight is the carcass weight after the hide, head and entrails are removed. Average trim off the hanging weight is about 25-35% depending on several factors. (1) how lean or fat the individual lamb is; (2) how you choose to have it cut up and packaged. (bone in/fat trim/organ meats kept or discarded etc) This is often referred to as the ‘Edible Yield’, ‘Take Home’ or ‘Retail’ Yield.

For Example: If the hanging weight is 81# and 30% is trimmed, 81# hw minus 24.3# (30% trim) = 56.7 # take home edible yield. This is an approximate example. ***

***All butcher and Custom Cut & Wrap fees are paid directly to processor at time of pickup. Check with processor for their processing fees as they change. Local Processors are Sharp Custom Cutting and Mount Angel Meat.
